Sweet Semolina Cake – Ravani with yoghurt and malotira
We boil the water with malotira for 5 minutes. We remove malotira, we add sugar and lemon, we boil for 5 minutes and then we leave it to cool. In a mixer, we mix the eggs with sugar for 15 minutes until the mixture becomes light and fluffy. Then, with a spatula, we add the yogurt, milk, and butter and we mix well. In the end, we add the semolinas and we mix until they homogenize, and then we transfer it to a 34 cm baking pan that has been greased with butter. We bake for 20-25 minutes at 180 degrees. When ready, remove from the oven and immediately begin pouring the cooled syrup over the cake with a ladle and we leave it to rest for 30 minutes.
