Orange cake
For the ganache, we put in a bowl all the ingredients and we mix with an egg beater until they homogenize. In a basine we put the warm margarine with the sugar and we mix for 2-3 minutes. Then we add the juice and the eggs. We add the carrot, the ground coconut, and the zest. In another bowl, we put the flour, chia seeds, the poppyseeds, the dried apricots, and the vanilla extract and we mix with a spoon. In the end, we put the flour in the liquid mixture and we mix until they homogenize. We put the mixture in a cake pan (28cm). We bake for an hour at 180 degrees set to fan. We leave it to rest for 10 minutes and we pour the ganache.
