Gastrin the ancient dessert of Crete
We mix all the ingredients for the phyllo until it becomes a soft dough, we divide it into three and we roll it with the rolling pin. We mix the filling materials well and we split them into two. In an oiled baking sheet, we place one phyllo and we add half the filling. We place the second phyllo and add the rest of the filling and we cover with the third phyllo. We spread some water in the phyllo, we sprinkle with sesame and we score in a diamond shape. We bake in a moderate oven for half an hour. We prepare the syrup and when the dessert has a little bit cooled down, we spread it with the syrup.
